How I get smooth surfaces on open-grained woods.

When using open-grain woods like ash and oak a "smooth" surface isn't always as smooth as I need it to be no matter how much I sand it. If I want a surface that I can write on like a table or desktop, I like to use Durham's Rock Hard Water Putty to fill the grain and ending with a glass smooth finish.
